White and Chocolate Chip Cookies

While we lived in England, one of the things I found was that I missed Chocolate Chip cookies. Just regular 'Nestle Toll House' Variety. There is NOTHING like freshly baked cookies!! So I thought how appropriate to give you THE chocolate chip recipe, especially for all of you who had them many times when we were in England ... but with alittle festive twist, the addition of white Chocolate Chips to regular Semi Sweet chips. I know the  chips are a bit different in the U.K ( more chunky), but they should work just as well, if not better.
We all know chocolate in the U.K is by far much better than the U.S! You could even crumble up a lovely bar of Green and Blacks.... YUMMMMMMMMMMMM

makes 2.5 Medium sized cookies


Ingredients

 2 1/4 cup all purpose flour
1 tsp baking soda

1 tsp salt
1 cup of butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 1/2 tsp of Vanilla extract
2 large eggs
2 cups mixed white and semi sweet chips
1 cup of nuts if desired


Prepare

* Mix Flour, Salt and Baking Soda into a small bowl
* In another bowl ( or a mixer) add butter, sugars,vanilla and eggs, beat until creamy
* Add Flour mixture slowly and at the end add the chips
* Refrigerate mixture covered for at least 1 hour or until chilled

* Pre-heat oven to 350 degrees
* On non-greased cookie sheets place a tablespoon amount onto sheet
* Bake for 9 to 12 minutes, or until golden, remove from cookie sheet and cool on a rack


Cook longer for harder cookie, less for softer

Wine Suggestion - Grappa (not for the light weight!)

Serving sizes and this sight.....

As many of you have come to realize, I am usually making huge amounts of food and alot of times for more than just my family. However, I would be horrified to think that someone who was living alone, or with only a couple people in their home would feel discouraged about this..
Simply use division for most of these recipes if they are too big. With the exception of baking, which requires a fair amount of science, these recipes can be adjusted and modified with ease! And if you feel stuck, either leave me a comment or email me and I will try to respond to you as soon as I can.
